Q: I have an abundance of Basil in the garden. How can I save it for use this winter?
A: My favorite way to save basil is to freeze it. Simply wash and dry the leaves. Spread a single layer of leaves on a cookie sheet and place in the freezer. When the leaves are frozen, place in a freezer bag and reduce the air in the bag by sucking it out with a straw . Or, drop your basil into a blender with some water. Run the blender and pour the mixture into ice cube trays. Let freeze. Store your basil cubes in a plastic bag. The next time you are making spaghetti sauce or soup, throw in a cube.
